TPTS Fitness Club Fakeaway Friday

Ingredients
- 2 tbsp olive oil
- 2 chicken breasts (skinned), chopped
- 1 onion, chopped
- garlic (2 cloves), finely chopped
- 1 green chilli (seeded), chopped
- 2 tsp curry powder (or paste)
- 1 tsp tomato puree
- 1 tsp root ginger (peeled), grated
- ½ green pepper, sliced
- ½ red pepper, sliced
- 125ml water
Method
- Heat the oil in a pan
- Add the onion, garlic and chilli and fry for 5 minutes
- Add the curry powder (or paste) and the tomato puree
- Stir and then add the chicken, ginger, red pepper and green pepper
- Allow the chicken to cook for a couple of minutes and then add 125ml of water
- Stir and cook for a further 10 minutes
