TPTS Fitness Club Fakeaway Friday

Ingredients

  • 2 tbsp olive oil
  • 2 chicken breasts (skinned), chopped
  • 1 onion, chopped
  • garlic (2 cloves), finely chopped
  • 1 green chilli (seeded), chopped
  • 2 tsp curry powder (or paste)
  • 1 tsp tomato puree
  • 1 tsp root ginger (peeled), grated
  • ½ green pepper, sliced
  • ½ red pepper, sliced
  • 125ml water

Method

  1. Heat the oil in a pan
  2. Add the onion, garlic and chilli and fry for 5 minutes
  3. Add the curry powder (or paste) and the tomato puree
  4. Stir and then add the chicken, ginger, red pepper and green pepper
  5. Allow the chicken to cook for a couple of minutes and then add 125ml of water
  6. Stir and cook for a further 10 minutes
